Ingredients

1 egg
-
¾ cup (5 3/8 oz) Dark brown sugar

½ cup (6 oz) honey
-
½ cup (6 oz) Molasses (Black strap for stronger taste)

3 cups (12 oz) White whole wheat flour
-
½ tsp ginger
-
1 tsp cinnamon
-
½ tsp cloves
-
½ tsp allspice
-
½ tsp baking soda
-
½ cup (4 oz) candied citron
-
½ cup(2 oz) currants
-
½ cup (2 oz) slivered almonds
-
½ cup (2 oz) chopped hazelnuts

Directions
In a large bowl beat the egg,
sugar, honey and molasses until smooth. Combine flour, soda and spices
and add slowly to molasses mixture. Mix in fruit and nuts by hand. Cover
or wrap dough, and chill overnight.
Preheat oven to 400 deg (375 for a dark cookie sheet.) (200 C) Grease
cookie sheets well: On a lightly floured surface, roll the dough out
into ¼ inch thickness. Cut into rectangles. Place cookies 1-2 inches
apart.
Bake for 10 minutes until firm. White still warm brush with lemon glaze.
To make the Glaze: in a small bowl stir egg white, lemon juice and zest.
Then mix in confectionary sugar until smooth.
Makes 24-36 Cookies.
